Normcore, it's hitting the kitchen too. Upscale restaurants are having to compete with taste winding down from fine dining, to casual classics done well. Whether it be burgers, hotdogs, or ramen, the democrazation of good food is what fashion did to clothes. Normcore + culinary = normnivore. What's more normal than a slow cooker? Here's a shoestring budget recipe with very average ingredients from a dear chef friend of mine. Just trust me, it'll will be a crowd pleaser.
Things you'll need:
- A slow cooker.
- Frozen chicken breast. Yes, it has to be frozen for the chicken to shred once it's cooked. I get the highest rated and local, of course, and freeze overnight the night before I want to make these. Get as much as you want to serve and will fit in your slow cooker. Remember that you can use what's leftover as chicken salad.
- Pace pac ante sauce (really). Pick one according to what heat level you want.
- Chicken broth.
- Whatever sides you like on your tacos ex. cheese, avocado, sour cream..
I freeze my chicken on my own, because the free range, local chicken I use doesn't come frozen. You'll want tot start the slow cooking around 6-8 hours before you want to serve your tacos, so drop those chicken breasts in your slow cooker. Pictured here is 4 pounds.
Next, add your picante sauce and broth.
Next add enough water to cover the chicken.
Cover and put on low heat for 6-8 hours. Your chicken will look somewhat like this, and make your whole house smell AMAZING.
Remove the cooked chicken breasts and add them to a bowl with a slight bit of the broth. Grab two forks and start shredding.
Then toast your tortilla, top with chicken, and add your favorite condiments, I chose guacamole and sour cream.
There you have it. It's as normcore as a recipe can come.
